Sencha - Japanese Green Tea
Sencha is by far the most popular tea in Japan and accounts for the majority of the local production. This high-quality tea is plucked in the spring and steamed lightly before being rolled. The leaf appears to be slightly brittle. After brewing, the fine leaf structure becomes clearly visible.

I've happily been drinking "premium" Japanese sencha from the grocery store for a long time, and tried this tea out of curiosity. I'm so glad that I did! I found this tea to be amazingly better - fresher and deeper and more complex flavors - and I'm going to use it regularly going forward!
